How do I extract one page from a multipage PDF on a Mac?

Open the PDF in Preview
Use Command + P or select Print from the File menu to open the print dialog box
Select single from the Pages dropdown menu

Type in the number of the page you want to extract
Select Save as PDF from the PDF drowpdown menu at the bottom left corner of the print dialog

Name the PDF and select the save location in the save dialog box
